Dak Dae

Very little is wasted in the process of silk production. Scraps of chewed-up leaves and worm excrement are used as natural fertilizer, and some people even turn the worm excrement into a healthful chlorophyll drink. Once the silk is extracted, the boiled worms, or dak dae (ดักแด้), are cleaned and eaten. High in protein, they may be dipped in salt and enjoyed as a snack, deep fried, or mixed with other ingredients to make a kind of salad.
